These popsicles are absolutely divine in the summertime! The sweet strawberries and hint of lemon tart will give your sweet tooth all the satisfaction it needs and your body will thank you for steering away from the ice cream ;) It's truly amazing how easy and delicious homemade popsicles can be. It makes me wonder why anyone starting loading them with junk and artificial ingredients to begin with??
The bottom line is everyone, including adults, want popsicles in the summertime. That being said, you have 2 choices; buy the junk or make them in about 5 minutes with healthy, whole foods and ingredients. And since yesterday was the official first day of summer, celebrating with healthy popsicles is just what the doctor ordered!
WHAT YOU NEED:
INGREDIENTS
strawberries
coconut water
chia seeds
lemon
maple syrup

BLENDER

Strawberry Chia Seed Popsicles
SWEET
VEGAN + GLUTEN FREE
serves: 6-8
total time: 2 hrs
INGREDIENTS
- 2 cups strawberries (if frozen you may need to add more water to blend)
- 1 cup coconut water
- 2 T chia seeds
- juice of 1 small lemon
- 1-2 T maple syrup (1 tasted great in my opinion)
INSTRUCTIONS
- Blend strawberries, coconut water, lemon juice and maple syrup.
- Mix in chia seeds.
- Pour mixture in popsicle molds and freeze.
