- olive oil
- white wine vinegar
- lime
- cilantro

Mexican Quinoa Salad Bowl

INGREDIENTS

8 cups romaine lettuce or mixed greens kale, spinach, etc.)

quinoa mix
-
black bean topping
-
dressing
Quinoa Mix:
- 1 cup quinoa
- 1 teaspoon cumin seed
- 1 teaspoon dried basil
- salt and pepper (to taste - I used about 1/8 teaspoon)
- optional: pinch of red chili pepper flakes
Black Bean Topping:
- 1 cup black beans
- 1 cup cherry tomatoes, cut into halves or quarters
- 1 cup cucumbers, chopped
- 1/2 - 1 cup chopped fresh cilantro
Dressing:
-
2 Tablespoon olive oil
-
2 Tablespoon white wine vinegar
-
juice of 1 lime
-
1/4 teaspoon fresh cilantro, chopped
INSTRUCTIONS
- In rice cooker or boiling water: mix quinoa, cumin seed, basil, salt/pepper, and red chili peppers (cook time: stovetop or rice cooker instructions). Let cool.
- Mix black bean topping: black beans, tomatoes, cucumbers, and cilantro.
- Mix salad dressing and dress greens (with desired amount). Top with quinoa mix and black bean topping.
MAKE AHEAD TIP
- Make quinoa mix, black bean topping, and dressing ahead of time. Assemble when you're ready to eat!
